I prefer using a favorite recipe of mine for making French-style macarons, so be sure to use the technique and style you prefer and that is easiest for you. If you aren't sure, take a look at my half-recipe below or use Whipzi's Black Cocoa Powdered Sugar within your own recipe.
Ingredients You'll Need:
90g egg whites at room temperature
80g granulated sugar
150g powdered sugar
85g almond flour
2 tablespoons black cocoa powder
1/2 tsp vanilla
Equipment:
Piping bags
Baking sheets
Free downloadable skeleton templates (download below)
White Royal Icing or White Melting Chocolate
Instructions:
Prepare the Macaron Batter In a bowl, sift together the powdered sugar, almond flour, and black cocoa powder. In a mixing bowl, beat the egg whites until foamy with a whisk attachment, then gradually add granulated sugar until stiff peaks form. Add a few drops of black food coloring, and add vanilla. Once you reach stiff peaks, gently fold the dry ingredients into the egg-white mixture until just combined.
Pipe the Skeleton Shapes Place the free printable skeleton templates on your baking sheets. (Page 1) Then place parchment or a macaron baking mat on top. Fill a piping bag with the macaron batter and pipe it onto the templates, tracing the skeleton shapes. Remove the templates, and let the piped macarons sit at room temperature for 30 minutes to develop a skin and you can touch them without any residue.
Bake and Assemble Preheat your oven to 300°F (150°C). Bake the macarons for 12-15 minutes, then let them cool completely. Once cooled, carefully remove the macaron shells from your baking sheet. Prepare white royal icing or white chocolate and use the templates (Page 2) to practice piping before piping onto your macaron shells. Once comfortable, pipe the skeleton design on only half of the shells, and let dry completely.
Decorate Pair up the macaron shells by size. Fill a piping bag with your favorite filling (e.g., chocolate ganache, orange buttercream) and pipe it onto one shell of each pair. Sandwich the filled shell with its matching shell to create your macaron.
Voilà ! You now have a batch of adorable skeleton-shaped macarons ready to delight your taste buds and spook your friends this Halloween!
Pro Tip: You can get creative with the decorations by using edible markers, edible glitter, and other add-in flavoring for an extra spooky touch.
