
Muffin Tin Peppermint Lava Cakes

Craving lava cake but don’t have any ramakins? Not to worry! These super easy and delicious muffin tin lava cakes are the perfect mini, ooey, gooey snack and bring the perfect Christmas comfort with a peppermint twist.


These are easily adjustable, by adding protein powder, different flavored powder sugars, and fillings.
While this recipe does use espresso powder, and white chocolate peppermint centers, you may opt out of these, for a totally classic and nostalgic version.

Servings: 1 dozen
Ingredients
1 cup Unsalted butter (2 sticks, room temperature)
6 oz semisweet chocolate
6 oz dark chocolate
4 eggs
4 egg yolks
1/2 tsp espresso powder
1/2 tsp sea salt or table salt
1 teaspoon vanilla extract
1/2 cup all purpose flour
1 cup powdered sugar
1 tsp peppermint extract
Directions
Preheat your oven to 425°F and prep a muffin tin with nonstick spray or cake goop then dust with cocoa powder.
In a mixing bowl, mix in your flour, powdered sugar, salt, espresso powder.
In a medium saucepan, melt down your butter and chocolate until fully melted and there are no lumps.
Carefully add in your chocolate to your dry ingredients, then add in your vanilla, peppermint extract. Fold in the chocolate until it just starts to combine.
Whisk your eggs then add to your mixture. Using a paddle or whisk attachment, mix on low until all combined. It should resemble a smooth but thicker batter.
Fill each up to 3/4 way full (these don’t rise much) and if you are using a filling, press a butter mint or a white chocolate peppermint candy into the centers. These don’t need to be completely covered in the batter.
Bake for 8 minutes, or 9-10 minutes for less gooey center. The edges should be firm while the centers move if you shake the pan.
Leave in the muffin tin for 1 minute then using a larger pan or cutting board, place on top of your muffin tin with the lava cakes, then carefully flip. Tap 1-2 times to release the lava cakes and they should pop out.
Serve while warm with whipped cream, ice cream, sprinkles and a side of more peppermint candy.

Recipe Notes
For a protein packed lava cakes as seen on our instagram, use 1/4 cup of flour and 1/2 cup BetterDays chocolate protein powder.
For extra peppermint flavor, use flavored peppermint powdered sugar from Whipzi.
For a less liquid center, bake longer than 8 minutes, approximately 9-10, or 7 minutes for more gooey center.
